After fiddling around with my basic recipe for white flour pancakes, I have now found one that will replace it. It uses no oil, no salt, and no sugar and tastes great. I have not tried this as a basic pancake, and to be honest I don’t make them without fruit in them, because they are so unappealing health wise, I just think hmmm….whole wheat flour, milk and egg with maple syrup on top..ew….and it honestly just drives me nuts until I add a fruit to it. Now, this could truly taste awful without blueberries or another fruit in it to add natural sweetness, because it has honey, not sugar, so be warned!
Ingredients
1 1/3 whole wheat flour
1 1/2 tablespoons baking powder
1 egg
1 1/2 cups milk
3 tablespoons honey
1 cup fresh blueberries
Combine the two dry ingredients, and then either sift with a sifter, or take a whisk, and mix the flour with it. I don’t own a sifter, but a whisk fluffs up the mixture as well as mixes the baking powder thoroughly,and this is the secret to great homemade pancakes. Dissolve the honey into the milk, add the slightly beaten egg, then pour into a well in the flour mixture. Mix slightly then add in the fresh blueberries. Cook on a hot griddle till they bubble on top, flip, cook, then serve.
