Pancakes have always been my nemesis especially the “from scratch” kind. You wouldn’t think it would be that difficult as there aren’t a lot of ingredients in a basic pancake recipe and yet the perfect pancake made from scratch has always eluded me. In the past I would occasionally buy the boxed mix but usually if we wanted pancakes we went out for breakfast. That is until I discovered Sunny Boy Whole Wheat Pancake mix.
It’s one of the few whole wheat mixes that I have found, it only has 4 ingredients (you add the egg and milk) and for some reason they turn out perfect every time. The best part though is that it’s made by a local company right here in Alberta. “The origins of Sunny Boy Foods began in 1926 with the milling of flour. Sunny Boy cereal was introduced in1929 and became synonymous with healthy, hot breakfasts”…
Sunny Boy Foods also produces unbleached white flour, organic whole wheat flour and their hot cereal.
Although the pancakes are great without any “extras”, we usually increase the nutrition factor by adding blueberries and flax seeds or blueberries and shredded carrot to them and serve them with pure maple syrup.

I don’t usually care for pancakes at all, but the ones made with that recipe are good. We mess around with ingredients and use a mix of flours as well. I think our flour container right now is whole wheat and barley flour mixed together.
I recently tried the Sunny Boy pancakes and I love them! I usually make pancakes from scratch but some mornings I don’t have an ingredient or I feel just don’t feel like pulling out all the ingredients. These ones are delicious and healthy, and especially good topped with sliced fruit! And I’m an Alberta gal, too – it’s nice to have something that’s made in the province!
