Sinfully Good Homemade Mousse…For When You Need It Most.

This is an incredibly fantastic, rich and easy recipe for scrumptious chocolate mousse. I like to justify it by thinking of all that protein that I am getting out of it with 4 eggs.  Er, not that I eat it all, I DO share! But just think, if you split it into 4 servings, you are having an egg!  I think you could almost eat this for breakfast really, with that egg per serving and the coffee granules and all.

Chocolate Mousse

1 cup SemiSweet Chocolate Chips
1/4 cup Water
1/2 tsp Crushed Instant Coffee Granules

4 Egg Yolks
4 Egg Whites
1/4 cup Granulated Sugar

Melt chocolate chips and water over hot(not boiling) water.Stir in coffee.
Beat egg yolks until light colored. Add to chocolate mixture, beating to ensure there are no lumps. Remove from heat and cool.

Beat egg whites until stiff,then add sugar, beating until stiff again.Fold into chocolate mixture, then chill in sherbets or fruit nappies. Chill Several hours. Serve with whipped cream garnished with grated chocolate.
