Fiesta Eggs

Just another of our favorite breakfasts that is slightly off the beaten path. Kade will not eat plain scrambled eggs, but if I add salsa to the plate that he can dip his eggs in, he eats them, and voraciously. Sometimes it takes all my patience not to just say “pssssst…you’re eating EGGS you know!!” But then I would lose another opportunity to get protein into him somehow,and it would be rather small and petty of me. But darn it, it would feel good for a second.
