As we enter the fall season, the idea of planting our own vegetables can be both economical and nutritious. With such a variety of what we could plant, it is best to determine which vegetables grow best in the fall.

If you like greens, then you are in luck. Green vegetables such as broccoli, Brussels sprouts, spinach, cauliflower, lettuce or peas, grow very well in the fall and can even withstand cold temperatures. This is very important to note, considering temperatures are dropping at this time and some regions of the country get a lot colder in the evenings than in other areas.
Vegetables such as kale and collards grow the best during this season. Kale is extremely nutritious and can survive during such crisp days. Similar to kale, collards are another leafy type of green that has larger and stronger flavored leaves. Broccoli and cauliflower also grow well at this time and, as an added bonus, also provide strong potent vitamins against cancer.

Just remember to ensure that the pH in your soil is up to par at a neutral level around 7.0. Remember to remove old plants and add some rich compost for enrichment.
It is imperative to be familiar with and be well informed about the best planting times for your region. Determine when the average frost time occurs in your particular area. Different vegetables fare better than others depending on maturity dates for plants that are a little more delicate to hard freezes. Most of the green vegetables can tolerate light freezes and a select few can grow throughout the fall season and even straight through winter.

With this kept in mind, it is now possible to plant delicious vegetables in your fall garden. Even with cooler temperatures, it is still easy to produce and maintain wonderful, nutritious products.
