This is one of my favorite recipes – it’s absolutely fabulous and is great once in a while to indulge your toddler. Just remember it’s a snack and should not be served on a daily basis. Giving your child plain apples (better still – going organic) is always a better option for daily meals!
To make this super-delicious snack you will need the following ingredients:
- 2 apples (go for large apples if possible)
1 cup fresh or frozen blueberries
3/4cup mixed fruit muesli - 2 tablespoons maple syrup
- 50g butte
Peel the apples, remove the seeds and cut them into wedges. Preheat the oven to 375 F. Line a baking tray with baking paper and lay the apple wedges on baking tray topping them with raspberries. Sprinkle muesli over, then drizzle with maple syrup and butter (melt the butter first). Bake for 15 minutes, or until the tops are golden and fruit – tender. Serve the apple warm with vanilla yogurt, frozen yogurt or vanilla ice-cream depending on how much sugar you would normally allow to be consumed.
